SHIRAZ - CABERNET

Our house red for the bistro. Ripe grapes from local soils, handled gently to walk the line between deep satisfaction and reckless enjoyment.

It’s a Shiraz Cabernet….at long last! Grown on loose granitic soils of our own farm in the Coliban Valley, Metcalfe. The farming here is organic, without certification and the wine is made in a classic style for a deeper expression; open pots, pump overs, longer maceration, elevate in old oak and bottled with sulphur. A fairly serious wine at an absurd price for everyone to enjoy.

This is very much an any day of the week red….primary enough to be hoovered, but just enough tannin and fruit weight to warm a lonely heart.
