Our special Christmas Fizz!!

Chardonnay sourced from the 50 year old Norris Vineyard, grown on a lower east facing foot hill of Leanganook, with roots deep in sandy granitic soils. A very special site for us and one we have now taken over the farming of from this year forward.

A Methode Ancestrale chardonnay, picked at that sweet spot between fruit flavour and mouth puckering acidity with very low yields from these historic old vines. Hand picked bunches were gently pressed to tank and cold settled over a few days before being racked and allowed to naturally ferment in the winery. When the ferment slowed to 16g/l the wine was bottled and moved to the cellar to finish fermentation in bottle and then age on lees until we thought it was time to  show the world. Which is now.

20 months bottle aged on lees. Hand disgorged without additions. This is perfect bottle for your Christmas table. Wonderful yeast character, subtle oxidative quality with fruit weight and ripeness but all kept fresh and energetic with the vivid natural acidity that these old vines offer.

Label by Sylvie (an older work)….who has blagged her way into a $1 per bottle for use of the artwork, again!
